(Quite Possibly) The Easiest Kale Salad Recipe Ever
As you probably know by now, I absolutely love kale. This super veggie is loaded with nutrition–one cup of kale contains just 36 calories, and has 5 g fiber, calcium, Vitamin B6, magnesium, Vitamin A, Vitamin C, Vitamin K, copper, potassium, iron, manganese and phosphorus. It’s health benefits are primarily linked to the high concentration of antioxidant vitamins A, C and K and sulphur-containing phytonutrients.
The other day, I was really craving a raw kale salad but was short on time. So, I threw together this kale salad in just 5 minutes. And it was DELICIOUS!
I couldn’t wait to share it with you:
(Quite Possibly) The Easiest Kale Salad Recipe Ever
1. Take a container of pre-washed, pre-cleaned organic kale:
I bought this package at New Leaf Community Market.
2. Pour kale into a bowl and sprinkle with a little pinch of sea salt.
3. Next, massage kale (like you were kneading bread dough) for 3 minutes until it breaks down.
4. Add 1/3 cup your favorite tahini-based salad dressing (my favorite is from New Leaf–seriously, have you tried this stuff?) and a sprinkle of tamari or soy sauce.
5. And that’s it! A quick, easy, super-healthy kale salad that tastes delicious. It’s lunch time!

Could you reccomend a tahini based salad dressing that is in the regular markets of Trader Joes…??

Hi Stephania–Trader Joe’s has a bottled Tahini dressing that tastes okay, but if you cannot find a fresh, refrigerated tahini, I think you’d be better off making your own.
Here’s a simple tahini dressing recipe:
1 clove garlic, minced
1/4 cup tahini (great source of calcium)
1 Tablespoon miso (fermented soybean paste that contains beneficial enzymes)
1/4 cup water
2 Tablespoons fresh lemon juice
In a bowl with a whisk or food processor, mix together garlic, tahini, miso, water and lemon juice.

Hi Diane, It is New Leaf’s Tahini Dressing, and no, sadly, you cannot order it online.

I make mine using a potato masher to massage the kale, and I use some lemon juice. It really tenderizes it, like the way ceviche works. I make a bunch ahead of time, and use it as the base of a big salad every day. Yum!
